Cooking for Allergies

Just a short blog post this week. Wanted to share with you a simple recipe for a Dark Chocolate Brownie that is both Gluten and Dairy Free. We do a large number of private dinners now where we have guests with allergies. Just because you suffer from a food allergy or intolerance it doesn’t mean you should miss out. This Brownie is great served warm or even better when chilled. It’s dark and dense. We have served it to non allergy guests and they haven’t even been able to tell the difference.
  • Dark Chocolate (70% or above) – 250g
  • Vegetable Oil (Flavourless) – 180g
  • Fresh Vanilla – 1 pod
  • Eggs – 3 Medium
  • Caster Sugar – 260g
  • Gluten free Flour (I always use Doves Farm) - 85g
  • Cocoa Powder – 40g
  • Salt – ½ tsp

  1. Melt the chocolate slowly over a Bain Marie. When melted remove from the heat and mix in the oil and vanilla seeds. Allow to cool for 10-15 minutes
  2. Using an electric mixer, whisk the eggs and sugar together until a thick sabayon stage is reached. The eggs will increase in volume and the whisk should leave a trail that will take 4/5 seconds to fall back into the mix
  3. Sift together the flour, cocoa and salt
  4. Take the egg mix and fold in the chocolate/oil mix using a spatula. Then slowly fold in the flour mix, avoid folding too hard or over mixing as the air will be knocked out of the mix
  5. Put the mix into a greased tray lined with baking paper. Bake at 180C/Gas Mark 4 until the Brownie appears to be firm when the tray is given a shake
  6. Remove from the oven and enjoy

Even if you are not allergic to Dairy or Gluten, I thoroughly recommend giving this recipe a try. You will not be disappointed.
